Champagne Waris Hubert

Champagne Waris Hubert
The Waris-Hubert family has been at home in the Grand Cru village of Avize in Côtes de Blancs since the 1800s, and they have been growing grapes for just as long. But it was only when Stephanie and Olivier Waris married in 1997 and decided to make their own champagne that the Waris-Hubert label first saw the light of day (2001). The vineyards are ploughed with the help of horses, and the cultivation philosophy can, by their own account, be described as something "between sustainable agriculture and biodynamics." The company owns a total of 28 hectares spread across several fine sites including Oger, Cramant, and Aÿ. Each parcel is vinified separately, which explains why the Waris-Hubert cellar is full of small tanks and barrels - all in order to keep the different plots separate.
