Vinification
After manual harvest, the grapes are brought into the cellar, carefully sorted, and placed in stainless steel tanks for fermentation with indigenous yeast. Pump-overs occur during vinification, with the aim of extracting the grape's elegance. 5% of the grapes undergo carbonic maceration to preserve the grape's freshness. Malolactic fermentation takes place in stainless steel tanks.
