Vinification
The grapes for Davennes Chablis grow on 35-year-old vines on the south-facing slopes in the village of Courgis. The grapes are harvested by hand and pressed before fermenting in temperature-controlled stainless steel tanks. One hundred percent of the must undergoes malolactic fermentation, and the wine then rests for a couple of months on its lees before bottling.
