Food pairing
A gastronomic Champagne that pairs well with food, meaning not solely as an aperitif; suggestions include light meats, cheese platters, fish... The producer themselves recommends filet mignon with a Chaorce-cheese flavored sauce.
Vinification
One third of the wine is solera-aged, comprising a blend of vintages from 2000 to 2015. Fermented and aged in stainless steel tanks, with no malolactic fermentation, followed by 36 months on the lees. Production: 7000 bottles. Awarded Gold (95p) at the International Wine Challenge 2019.
