Vinification
A wine made 100 percent from reserve wine from the years 1980-2014; in other words, it has taken several generations of winemakers, in this case three generations, to create this somewhat unique wine composed of 70 percent pinot meunier, 15 percent chardonnay, and 15 percent pinot noir from Damery. The vinification process is rather traditional and occurs without malolactic fermentation and without filtration. Dosage is classified as Extra Brut (2 g/l). Bottling took place on March 24, 2016, and only 974 bottles were produced.
