Leeu & Passant Cabernet Sauvignon
Leeu & Passant Cabernet Sauvignon
A wonderful wine sourced from three vineyards in the cooler parts around Stellenbosch. The vines are almost 40 years old and grown as bush vines in soils partly rich in clay, silt and sand, and partly granite.

Vinification
Manual harvest, after which the grapes are chilled and destemmed before being placed in tank. Minimal sulphur is added and no further additions are made. After about four days, fermentation begins and is followed by pump-overs twice daily. The temperature never exceeds 28°C and fermentation lasts 7-10 days. After fermentation, skin maceration continues for a couple of weeks before the wine is racked to French 500-litre barrels, where it matures for up to 20 months. Thirty percent of the barrels are new.
