Character
The ripening season for this vineyard had favourable weather conditions, resulting in naturally balanced pure fruit, chalky tannins and prominent aromas. Notes of white lily and gentle spice on the nose, red berry compote on the palate and a stony minerality on the finish. The wine can easily be cellared for at least 25 years; if opened young, decanting is recommended.
Vinification
The grapes are picked in the cool early morning and fermented as whole clusters in 500L French oak barrels. After foot-treading, the wine ferments with very gentle extraction through hand punch-downs. To accentuate the fine tannin structure characteristic of its terroir origin, the wine was left in contact with the skins for three weeks before they were removed and the wine underwent malolactic fermentation and further maturation. The wine is then aged 12 months in French 500L oak barrels, of which 50% were new, followed by 10 months in 2000L foudres. When bottled, the wine is further aged eight months in bottle before release.
