Vinification
The grapes are hand-harvested from vineyards in Chablis and Epineul. The wine is produced according to the classic Champagne method and without dosage. "Is a delicately light sparkling Bourgogne made by the legendary former winemaker at Brocard. For many years now, she has run her own small winery producing elegant Burgundies from Chablis and adjacent areas, including this sparkling pure Chardonnay." Vinbanken October 22, 2015 "Sparkling wine made like Champagne but with Bourgogne as its address. 60 percent Pinot Noir and 40 percent Chardonnay form the basis for a virtually bone-dry fizz, which in many ways is reminiscent of Chablis. Think apple, lemon peel, mineral, and herbs. Perfect pre-party fizz." DN September 26, 2015 What is often missing in Crémant, but found in Champagne, is a minerality and stringent acidity. Clotilde Davenne is very close to the real deal with notes of nougat and apple pie baked with Ingrid Marie. GP July 31, 2015 "Crémant de Bourgogne on Chardonnay and Pinot. Rich, ripe orange-citrus with ripe apples, a spicy-sour sourdough note, and a good aftertaste." SvD April 7, 2015 "Treat yourself to a fizz over a hundred kronor, New Year's is only once a year. Clotilde makes a mineral-driven and Chablis-like Crémant that outperforms most sparkling wines on the Systembolaget shelves." Dry, refreshing with a mineral-driven Chablis character. Apple, mineral, and a piquant herbaceousness. Serve as a pre-dinner fizz or with green soup. Rating: 4" GP December 31, 2014 "Very dry, almost clinically clean at first, so where does the finishing, delicate note of marzipan come from, which we usually call an aftertaste? Here, it is purely a pleasure. With its elegant hints of dark chocolate and orange, the wine is equally suitable as an aperitif or with a saffron-scented bouillabaisse!" GP December 20, 2014 "Bone-dry and refreshing fizz whose mineral-driven Chablis origin is evident in both taste and aroma. Apple, mineral, and a piquant herbaceousness slowly unfold in the glass to finish appetizingly dry. When it comes to food, it's important to hold back on sweetness and preferably prepare something green and elegant like soup of green peas or nettles spiked with lemon or sour cream!" DN October 19, 2014 Crémant de Bourgogne: "Bone-dry and refreshing sparkling wine whose Chablis origin is evident in both taste and aroma. Apple, mineral, and a distinct herbaceousness that slowly unfolds in the glass. Equally good before the meal as when the party is in full swing!" DN August 29, 2014 August 29, 2014 "Bone-dry and refreshing sparkling wine whose origin, Chablis, is evident in both taste and aroma. Apple, mineral, and a distinct herbaceousness that slowly unfolds in the glass. Clean and flavorful despite a little sugar. Equally good before the meal as when the party is in full swing."
