Character
Full, mature and complex with notes of red apples, ripe citrus, bread, white flowers, nougat, toffee and dried nuts. Powerful mousse with fine bubbles.
Food pairing
As an aperitif, but also excellent with fish and shellfish as well as lighter chicken or veal dishes.
Vinification
The grapes come from a four-hectare vineyard of Xarel-lo and one hectare of Macabeo growing on calcareous clay soils in La Plana. The wine rests for 72 months on the bottle, more than double the time required under Gran Reserva regulations. For III Lustros, pupitres are still used and all disgorgement is done by hand.
