Vinification
The grapes are harvested from three different vineyards and three different soil types in Swartland. In the winery, whole clusters are pressed and the must rests overnight before being transferred to stainless steel tanks (85%) and used French oak barrels (15%) for fermentation. Fermentation takes approximately 6 weeks, after which the wines are blended and then bottled.
