Character
Very intense nose with highly complex aromas where very ripe fruit tones are prominent, together with clove, vanilla, and notes of chocolate and cocoa from oak. Well-polished tannins and fruity richness alongside nicely integrated acidity provide a balanced mouthfeel. The finish is long and complex, with notes of ripe fruit and toasted oak.
Food pairing
Pairs well with lamb and various grilled and pan-fried beef dishes.
Vinification
After fermentation in oak barrels, the wine is aged 26 months in French oak barrels made at the estate, of which 40% are new. The wine is then aged in bottle for a further 18 months before release.
