Character
Developed and very complex with fresh acidity and notes of yellow apples, citrus, browned butter and toasted oak.
Food pairing
A unique wine in a unique style that pairs perfectly with both chanterelle soup and aged hard cheeses.
Vinification
The grapes are fermented in temperature-controlled stainless steel tanks with daily pump-overs. The wine is aged for 18 months in American oak barrels and then for at least an additional 18 months in bottle before release.
