Character
Nuanced, very fresh palate with notes of oak, yellow plums, beeswax, minerals, dried herbs and nectarine. The barrel fermentation imparts a smoky character and a slightly creamy texture.
Food pairing
Pairs well with flavourful dishes of fish and white meat.
Vinification
The grapes come from the vineyard's oldest vines and undergo careful selection both at harvest and upon arrival at the winery. 70% of the wine ferments in French 500L barrels and the remaining 30% in stainless steel tanks. After fermentation, the wine ages on the lees for nine months. It is then bottled without filtration. Gure Arbasoak is Basque for "our ancestors" and is a tribute to traditional Basque culture. The words on the front label — "Baga, Biga, Higa. Ikimilikiliklik, Izan Ontsa!" — are an old Basque spell meaning roughly "One, two, three, abracadabra, be good!"
